TASTING ROOM INFO: We are currently open Thursdays through Mondays open at noon. We close at 5pm on Thursday, Sunday and Monday, but on Friday and Saturday we close at 6.

During the spring/summer we shift it later with the time change and normally open 7 days a week during busy times.

THEIR STORY: Stilson Cellars in Paso Robles, founded by Deb Stilson and her sons Tyler and Cole, embodies the essence of family and community through its boutique winery experience.

The story begins on a drive home after spending the weekend in Cambria when the Stilson Family fantasized about the idea of owning a vineyard and making their own wine. A month later in the middle of their busy lives down south, they revisited this idea and decided to go for it. Months of searching for properties led them to the perfect vineyard. This was the day that their fantasy became a reality. Established in 2019, the winery quickly became known for its elegant wines. The tasting room offers a warm, family-run atmosphere.

Committed to social causes, Stilson Cellars supports mental health awareness, inspired by personal loss, and thrives on community collaboration rather than competition. In the tasting room our story comes out as the wines are presented.

The Reverie (100% Viognier) stands for living in a dreamlike state but I interpret that as living out my dream to have an endless supply of wine.
Rosé Ray made mostly of Syrah began as a smart ass comment on my part to my boyfriend Ray (who is not a part of the business but loves to give verbal input) who kept saying that we need a rosé. I said "Okay, we'll call it Rosé Ray!" and he said "Great!" So his bald head is outlined on the bottle in gold with roses all over his face.
The Genesis (Syrah/Mourèdre blend) stands for new beginnings when we purchased the small vineyard in 2019 and decided to take this journey.
The Return (GSM blend) is the story of us returning to Paso. We had the good fortune to live in Paso from 2011-2013 but had to go back to LA County. We always said that we were going to return to Paso and retire here.
The Coalescence (Cab/Merlot blend) represents the perfect coalescing of these two grapes at the point where they shine together.
AWARE (Zinfandel Reserve) is a tribute bottle for my husband who passed away in 2016. AWARE stands for suicide awareness and prevention and we donate partial proceeds from every bottle to support two organizations who priovide mental health, free of charge and anonymously, to first responders and veterans.
Chrome (Cab Sauv Reserve) Reserve in that it was held back to age longer in the barrel than most of our other red wines.
We also have 100% Merlot, 100% Mourvèdre, 100% Grenache, and a 100% Syrah. My son, Cole, is our winemaker and I love everything that he makes!
5) We have two different tastling lists. The Principal List $20 and is the white, rosé, and 3 of our lighter reds. The Reserve List is $25 and is an all red list, ending with our two reserve wines
